One of the biggest benefits of using a meal kit is cutting down the mental load of having to plan dinners for the week. After a long day, it’s good to know there’s something interesting in the fridge that won’t take ages to cook. I’ve been using a few different meal kits since 2022, and I appreciate how HelloFresh offers a less stressful approach to meal planning whilst not compromising on flavour. Weeknight Chicken Fried Rice is up first.

This dish is HelloFresh’s take on the classic takeaway favourite, chicken fried rice. The recipe box came with chicken breast pieces, basmati rice, sliced mushrooms and pak choi. The flavour base consisted of ginger, garlic, soy sauce, ketjap manis and a sachet of Indonesian style spice mix. A separate twist was the spicy sambal paste, which was mixed with mayonnaise to create a creamy drizzle to finish the dish, promising a much flavourful meal than your average Friday night takeaway.
As the name suggests, this was a perfect weeknight meal. The recipe card was exceptionally clear, with straightforward steps that were easy to follow. The preparation was minimal: just a bit of chopping. The whole dish came together in about 25 minutes as promised. There were no complicated techniques or overwhelming steps, making the entire process feel calm and controlled. It was a genuinely low-effort cook, which is exactly what you want when you’re short on time and energy.
I was impressed by the depth of flavour in this dish. Unlike some takeaway versions that can be a bit one-note, this was layered and aromatic. The Indonesian style spice mix, combined with the fresh garlic and ginger, paste gave the dish a fragrant warmth, while the soy sauce added a deep, savoury quality. The textures were great too, with tender chicken, fluffy rice, and the fresh crunch of the pak choi. The sambal mayo drizzle was the star, adding a lovely creamy heat that you could dial up or down to your preference.
The portion size for two people was ideal. It was a generous and filling meal that left us both satisfied. The value here comes from the convenience and lack of food waste. Every ingredient was perfectly portioned, so there were no half-used jars or wilting vegetables left in the fridge. For a quick, flavour-packed, and completely hassle-free dinner, it felt like good value.
I recommend the Weeknight Chicken Fried Rice. It’s an excellent choice for anyone who wants a delicious meal that’s quicker and tastier than ordering a takeaway. It is particularly well-suited for beginners or nervous cooks, as the simple instructions guarantee a great result. My only minor personal quibble is that I think peas would have worked slightly better than the pak choi, but that’s just a matter of taste. Overall, it’s a definite winner for a midweek meal.
